There isn't default text for those pages if that's what you are seeking but it's easy enough to do from the Admin panel > Manage pages. Because each of our directories vary so much it would be difficult at best to come up with some sort of default terms or help file. For the most part the extra custom pages are for our own use should we need additional pages added to our directory and this way they are all formatted and ready to go. I have used one to host my site banners on and another is in the works for webmaster submission guidelines as examples.

You can find generic Terms of Service or Terms of Use by using Google. I had to sift through some pay sites offering those things, but found what I needed.

Same goes for generic Privacy Policies.

Google is your friend.

Here's a rough draft of my Privacy Policy (still a work in progress);
http://www.kinkincanada.com/links/ppolicy.html

Feel free to copy and paste if it's helpful at all but I will be revising and expanding it over the next few days. Right now I'm just pushing to get my site completed and will go back to do the polishing later. The Terms of Service page I turned into a banner page and won't be having one on my site.

PriorityDigital.com offers free privacy policies. However, when you paste the code, or even plain text, you get slashes and bad links. Is there any way to avoid that stuff?

You can get around that by pasting the html directly to the "content" field in the dir_pages table of your database using phpmyadmin.

Thanks, Bryan. I read that somewhere else and tried it. It works well.
