SEO Question: Which URL works better?

Assuming I don't have the word "Plumbers" in my domain name, which of the following do you think would work better when it comes to ranking on the search engines (a directory of plumbers)? Sorry if this is a lame or redundant question, I just couldn't get a clear idea on what works best after reading through the posts here.

Long ago I was convinced that domain names with dashes were the SEO preferred way to go.
So crime-scene-cleanup.com would have more value than crimescenecleanup.com.
The last six months or so I've begun to question the dash theory because I've seen so many domains with something like alabamaplumbing.com doing as well and often better than alabama-plumbing.com.

I remain using the dash, but wonder if search engines can not figure out the presence of nouns in gibberish:
alabamapumbing.com.

I know there are many variables involved in SEO, and now the word is that Google will begin throwing a new hardball curve for SEO folks to figure out.
